Why does (x-1) change to x+1 ?

You might be referring to changing "(x-2)" to "x+2"?  Clicking on a particular step allows you to clearly review the logic which is employed.  The negative symbol in front of the parentheses will change the sign of every term in the parenthetic statement as the parentheses are dropped.  That means "-(x-2)" becomes "-x+2".
